
Rebellyous Foods launched its Mock 3 production system in Washington State at the end of December 2025, marking a major step in making plant-based meat production more affordable and efficient. The Mock 3 system is fully automated and continuous, replacing the old batch production method. This change reduces the need for labor and allows for higher production volumes.
This launch follows several years of development and builds on the Mock 2 system, which was introduced in 2024. The Mock 2 was a step toward industrial food automation, with a capacity to make 2,500 to 5,000 pounds of plant-based meat per hour. In 2025, Rebellyous received $2.4 million in funding to scale up Mock 2.
Now, with Mock 3, Rebellyous can produce over 5,000 pounds per hour, putting it on par with conventional meat production. The goal of Mock 3 is to reduce costs and make plant-based meat production competitive with traditional meat.
The company traces its innovative manufacturing approach back to 2017, when it was founded as Seattle Food Tech. The system is protected by 14 patents, with six more pending. While creating the technology was challenging, the company now sees it as a key step in making plant-based meat more accessible.

According to Christie Lagally Bradburn, Founder & CEO, it was a momentous final week of 2025 to see that plant-based meat can be made fully continuously, automated in high volumes and with considerably reduced labor compared to conventional methods commercially.
