High pressure processing is a non-thermal processing technique wherein food products and beverages are subject to relatively high isostatic pressure in order to extend the shelf life. The HPP equipment operates on high isostatic pressures (around 250 - 600 Mpa) in order to inactivate the microorganisms and denature various enzymes without affecting the chemical composition, and taste of the food products. Such HPP systems are also referred to as high hydrostatic pressure (HHP) systems or ultra-high pressure (UHP) systems.
